Sauvignon Blanc can be crafted into surprising new styles under a skilled winemaking hand.  This Sauv Blanc flight includes three distinctive wine styles, all crafted from grapes hand-picked from our Haines, Kangaroo Island vineyard.

2 x 2023 Sauvignon Blanc:  A crisp, contemporary fruit-driven Sauv Blanc.  Hand-picked, pressed & cool fermented in stainless steel to create a crisp, contemporary Sauv Blanc showcasing all the variety's primary characteristics.  It's delicate & aromatic with a light herbal note, ripe citrus & tropical fruits rounded out with acidity to finish elegant, clean and crisp.

2 x 2021 Fume Blanc:  A single-barrel release in a nod to the wines of the Loire Valley, France, known for having a slightly smoky perfume.  The grapes are pressed, cold settled, then wild fermented in French oak, before being aged in oak on fine lees for 18 months, building complexity & texture. The primary varietal notes of tropical fruit, lemongrass & sea spray are layered with secondary characteristics from oak aging like vanilla, honey, floral & toasty notes. 

2022 Enigma:  A truly unique wine, Enigma is our first skin-contact Sauv Blanc in the 'orange wine' style.  Grapes are crushed, pulp & juice wild fermented in French oak, remaining untouched on skins for seven months.  After pressing, the wine is returned to French oak for an additional year of aging before filtering with a minimum of preservatives.  Deep gold in colour with varietal characteristics of passionfruit, lime zest, ripe citrus & herbal notes blend with savoury/sour notes, texture, & tannic structure, which is generally expected of red wine.
